Vegetarian Turnip Casserole Recipe

Turnip casserole cooked with celery and green peppers, coated in a cheese sauce and topped with bread-crumbs.


1 1/2 turnips
2/3 cup celery, chopped
1 onion
1 green pepper
1 cup milk
2 tsp butter
2 tsp flour
1/2 cup grated cheddar cheese
3 tsp bread-crumbs

Recipe Instructions

Prepare the vegetables
Peel the turnip and cut into thin slices. Thinly slice the onions and green peppers.

Cook vegetables and cheese sauce
Heat a large saucepan of salted water and add the turnips. Cover and cook for around 15 minutes until soft. Drain. Sauté the green pepper, onions and celery for around 10 minutes. Sprinkle in the flour and cook over a low heat for 1 minute. Add the milk and simmer until sauce has thickened. Stir in the cheddar cheese and season to taste. Stir in the turnips and put in a baking dish. Sprinkle the bread-crumbs over the top

Grill until the top is light brown.

Serve hot.
