Turnip and Bacon Casserole Recipe

A delectable turnip side dish recipe

Turnip and bacon side-dish cooked in stock, with sage.


450 g ( 1 lb) medium turnips
100 g (1/4 lb) diced bacon
75 g (3 oz) diced onion
1/4 pint stock
1/2 oz butter
1/2 oz flour
1/4 tsp castor sugar
1/4 tsp sage
2 tbsp flat-leaf parsley, chopped
freshly milled black pepper

Recipe Instructions

Prepare and cook
Peel and chop the turnips and cook in boiling, salted water until tender. Drain. In a large saucepan add the butter and bacon and sauté for around 5 minutes. Add the chopped onion and stir well. Reduce the heat, cover and cook slowly until the onions are translucent. Mix in the flour and stir well, cooking for a further couple of minutes. Remove from the heat and stir in the stock. Add salt and pepper to taste, with the sugar and sage. Add the turnips and stir well. Recover and simmer for around 20-30 minutes. Turnip should be soft.

Finish and serve
Sprinkle with chopped parsley and serve.

    I have found a long thin version of the turnip growing, about the length of a carrot. The colouring is creamy white with purple top. Is this still edible?
