Scalloped Turnips Recipe

Main course vegetarian recipe

Cooked turnips, topped with a white sauce and cheese and baked in the oven. Can be served as a vegetarian main-course or side-dish.

Ingredients

3 medium turnips
3/4 pint milk
2 tbsp plain flour
2 tbsp butter
5 oz grated cheddar cheese
1 tsp salt
freshly milled black pepper

Recipe Instructions

Prepare and cook the turnips
Peel the turnips and cut into thin slices. Put in a saucepan, cover with salted water and bring to the boil. Leave uncovered and boil for 15 minutes until turnip is tender. Drain.

Cook white sauce
Melt the butter in a saucepan over a low heat , and add the four. Mix well and cook for 1 minute stirring constantly. Take off the heat and add the milk very slowly stirring well. Use a balloon whisk to ensure no lumps. Once milk is fully incorporated, put back on the heat  and cook, stirring constantly until thickened. Add salt and pepper to taste.

Bake
Preheat oven to 220oC. Butter a casserole dish and put in the cooked turnip. Pour over the sauce and sprinkle with the cheese. Bake in the oven for 10 minutes.
