Red Pepper and Turnip Salad Recipe

A tasty turnip salad side dish

Wilted turnip and red pepper salad, Served with lemon juice as a salad side-dish.


2 turnips
1 small red pepper
juice of 1 lemon
1 2/3 tablespoon salt

Recipe Instructions

Prepare the vegetables
Peel the turnips and cut the stems off. Cut the turnips into 4 length-wise, then using a mandolin, slice the turnips into very thin strips. Remove the stem and seeds from the red pepper and cut into 3-4 pieces. Again using the mandolin slice the red pepper into thin strips. Put the red pepper and turnip slices into a large bowl and sprinkle 1 tbsp salt over them. Stir well. Leave the mixture to rest for 30 minutes – 1 hour. Slices should be wilted. Once rested, run under cold water to remove the salt. Drain and leave on kitchen roll.

Prepare the salad
Put the lemon juice and 1/2 tbsp salt in a medium bowl and add the vegetable slices. Toss and refrigerate for at least 30 minutes.

Serve cold as a side-salad
