Pork and Turnip Fricassee Recipe

A delicious turnip fricassee recipe

Spicy Cajun pork tenderloin cooked with turnip, celery and green pepper. Served with rice.

Ingredients

12 small white turnips
12 oz pork tenderloin
1/4 cup chopped green pepper
1/2 cup chopped onions
1/4 cup chopped celery
1 tbsp spring onions
1 tbsp Cajun seasoning
2 tbsp oil
2 tbsp plain flour
2 cups chicken broth

Recipe Instructions

Prepare the pork
Cut the pork into cubes and coat with the Cajun seasoning. Cover and refrigerate for 3 hours.

Cook pork and vegetables
In a large saucepan heat the oil, and add the pork. Fry until all the pork is browned. Remove from the saucepan with a slotted spoon and transfer to a plate. Add the flour and cook on a low heat fro 3-4 minutes stirring well. Add the onions, peppers and celery and cook until the vegetables are tender. Put the pork back into the saucepan. Add the turnips and chicken broth, bring to the boil, reduce the heat and simmer for 40-50 minutes. Remove from the heat and stir in the spring onions.

Serve
Serve hot with rice.
