Lancashire Hot-Pot Recipe

Tasty Lancashire hot-pot with lamb, carrots and turnip. Served in a casserole with a layer of potatoes.

Ingredients

700 g lamb
1 medium turnip
600 g potatoes
2 carrots
100 g onions
100 g leeks
bacon dripping
water
salt
freshly milled black pepper

Recipe Instructions

Prepare the vegetables and lamb
Peel the turnips and carrots, Slice thinly. Chop the onions and leeks. Slice the potatoes thickly. Chop the lamb into chunks.

Cook the hot-pot
Preheat oven to 180oC. In a casserole put in layers of vegetables and lamb and add salt and pepper to taste. Layer the potatoes on the top. Pour in enough water to go up to 1/3 of the casserole and dot with bits of bacon dripping. Cover the casserole and put in the oven for 2 1/2 hours. Remove the lid from the casserole, put oven temperature up to 200oC and cook for another 30 minutes.
