Duck and Turnip Pot Roast Recipe

Delectable turnip pot roast recipe
Yield: 4    Preparation Time:     Cooking Time: 2 1/2 - 3 hrs
Duck cooked with turnips, onions and bacon. Delicious served with mashed potatoes.


1 2Kg medium duck
8-10 whole baby turnips
2 onions, quartered
6 garlic cloves
200 g dry-cured bacon
200 ml sherry
1.5 litres stock or water
2 tbsp olive oil
3 tbsp cider or wine vinegar
1 tbsp tomato puree
1 tsp sugar
1/2 tsp salt
Flat-leaf parsley, chopped

Recipe Instructions

Prepare and cook
In a large oven proof casserole, heat the oil. Add the duck and brown on all sides. Remove, and set aside. Dice the bacon and add to the casserole with the garlic. Fry for around 4-5 minutes until browned. Chop the turnips and add to the casserole with the onions and continue to fry for 6-8 minutes. Remove the vegetables and bacon. Add the duck back into the casserole with the vinegar, stock or water, sugar, tomato puree, salt and sherry. Add the bacon and vegetables back into pot and mix everything together. Bring to the boil, reduce the heat, and simmer for 2 – 2 1/2 hours until the meat is very tender.

Finish and serve
Remove the duck and vegetables and reduce the liquid to a thicker consistency. Serve the duck and vegetables with the sauce poured over and garnished with the parsley. Serve with mashed potatoes.
