Crunchy Turnip Crumble Recipe

Casserole dish with turnips topped with a crunchy topping. Served as a vegetable side-dish.

Ingredients

2 medium turnips
2 medium eggs
1 tsp baking powder
1 tbsp brown sugar
1/2 tsp white pepper
1/2 tsp salt
4 tbsp butter, melted
8 tbsp bread-crumbs

Recipe Instructions

Prepare the turnips
Peel and turnips and cut into 2 cm cubes. Boil in salted water until soft, around 30 minutes. Drain and add 2 tbsp butter and mash well.

Bake
Mix the baking powder, brown sugar, pepper and salt together and add to the mashed turnip. Beat the eggs and add to the turnip mixture stirring well. Put in a shallow baking dish. Sprinkle the bread-crumbs over the top and dot with the melted butter. Bake in a medium oven for around 25 minutes until lightly brown on top.
