Cream of Turnip and Potato Soup Recipe

Turnip and potato soup which can be served two ways. Served chunky or pureed with cream.

Ingredients

200 g turnips
1 l stock
100 g onions
200 g potatoes
50 g butter
50 g plain flour
sprig rosemary
60 ml cream
salt
freshly milled black pepper

Recipe Instructions

Prepare vegetables
Dice into small cubes, around 1 cm, the potatoes and turnips and slice the onions. Put the butter in a large saucepan and gently melt. Add the vegetables and cook for 2 minutes. Add the flour and stir well to incorporate.

Cook the soup
In a separate pan heat the stock until it is simmering and add to the vegetable mixture. Bring to the boil and add salt and pepper to taste. Add the sprig of rosemary and simmer for around 45 minutes.  Skim the surface of the soup if necessary.

Serve
Serve in hot bowls with the vegetables whole, or liquidise to a puree adding cream before serving. Serve with crusty bread.
